A lot of blue ray movies take up a [expletive] ton of data, some games take a ton (piles up if you have a bunch), and tons of people download their music, photos, videos, etc on there. DLC, downloadable games, disc to console copying, etc. Hell, some people have a keyboard and use the PS3 and their PC as well. It's definitely not for most, but lots of people can have use for 500 gigs for sure.
